Commercial infant foods are used as source of nutrition for babies. In particular mother's milk substitutes or supplementary food play an important role both when a mother has insufficient milk or chooses not to breast feed, and during weaning, and during the baby's first years. For this reason, the hygienic and nutritional quality of infant foods is a primary requisite to guarantee safety and equilibrate the nutrient intake. The aim of this work is the evaluation of the acidic profile and microbiological quality of several commercial baby foods. All the samples showed a high microbiological quality and were characterised by different acidic profiles. In particular freeze-dried products, mainlv poultry and rabbit meat, were characterised by nigh amounts of PolyUnsatured Fatty Acids (PUFAs) and by a good polyunsaturated/ saturated fat ratio.
