The contribution complements the many linguistic studies carried out on the text of the Liber de Coquina with a historical approach, in order to bring out the morphology of consti- tution and the manner of use of the composition of this text, in close relation to the organisation of the Angevin court hotel. Certain linguistic persistences in cooking practices are analysed comparatively with the texts of Apicius and Antimo. The composition of various preparations is explained in relation to the dialectic ‘food of the rich / food of the poor’ as an emerging feature in the medieval and modern gastronomic landscape of Italian tradition. The Liber is also placed in relation to the cultural environment of Angevin Naples, between Charles I and Charles II, as well as the agro-food resources characterising the agricultural production of the Casali area and the Neapolitan markets between the 13th and 14th centuries.
