The aim of the study was to develop and evaluate the antimicrobial efficancy of chitosasan and methylcellulose films containing natamycin as antimicrobial agent. Cheese samples were completely covered with the active films, stored at 20°C for 7 days and analyzed for moulds and yeasts. Datas showed significant differences betweeen chitosan films containing natamycin and polyethylene films, as control, according to mould/yeast counts (P>0.5%). The packaging films containing the antimicrobial agent could prove more efficient, by slowing the migration of the agent, thus helping to maintain high concentrations where they are needed. Moreover the antimicrobial properties indicate that chitosan film incorporated natamycin has great potential to be used in food packaging.
