"In this study, colorimetric indices and bioactive molecule content in nine pigmented rice samples were assessed. Colour parameters L*,a*, b* were detected by a Konica Minolta Colorimeter, while bioactive molecules such as total pigments, anthocyanin and phenolic compounds were determined by spectrophotometric methods. The main carotenoids i.e. lutein, zeaxanthin and β-carotene were detected by RP-chromatography. . A comprehensive characterization of rice samples was achieved and the relationship between colour parameters and the carotenoid content assessed. The obtained results can be used to evaluate the nutritional properties of rice varieties under investigation.. "
