The determination of the metals in the virgin olive oils is a quality parameter. In these oils the iron is the most abundant and representative metal while ail the other are present only in traces. In this works the iron contaminations in the olive oils caused by the classical system are investigated. The iron contents found are related with other qualitative parameters of the oils, particularly with the oxidation resistance. it is demonstrated that the production plants using classical system, release high iron quantities to the oils. The iron has positively influenced the initial peroxide values of the oils and has compromised the oxidative processes.
