We investigated the phenolic composition and antioxidant capacity of the methanol extract of walnuts. The extract exhibited a high polyphenol content (3.21 mg/mL). The Chromatographic analysis (by Ul'LC) revealed a rich profile of polyphenols present, the most abundant were rutin (32%), epicatechln (21.2%) and chlorogenic acid (13.77%). Catechin, caffeic, ferullc and p-coumaric acids, as well as apigenin, luteohn, and nanngenm were less represented. A good antioxidant capacity was found (EC 50 of 2.24 mg/mL). The inhibition halo test, performed against different Gram positive (K. faecalii, B. ccmui, S. aumi.i) strains and a Gram negative toxinogenic E. coli one, revealed antimicrobial activity; K coliwas the most sensitive (15 mm inhibition halo). For the first time, the potential Antiquoruin Sensing (AQS) activity of nut extracts was evaluated. Violacein production by C'. cloluceiim was blocked with 37 pg of extract.
