Pecorino Carmasciano cheese is produced in a little area in the province of Avellino. The main characteristics of this cheese are due to its particular technology of production, handed down from generation to generation, to the employment of raw milk and to the complete absence of starter cultures. The spicy taste and the strong smell are mainly ascribable to the natural and heterogeneous microflora involved in ripening and responsible for metabolic activities that contribute to define the characteristics of the final product. In the present work, the microbial profile of the Pecorino Carmasciano cheese was defined thanks to the employment of phenotypical and biochemical tests together with genetic methodologies, that contributed to the detection of species and/or strains of lactic acid bacteria involved in the characterization of this cheese

Il formaggio Carmasciano è un pecorino prodotto in una delimitata zona nella provincia di Avellino, caratterizzato da una tecnologia di produzione mantenuta invariata da generazioni, che prevede l'impiego di latte crudo e l'assenza di utilizzo di colture di avviamento. Il suo gusto sapido e piccante e l'odore intenso sono dovuti, in buona parte, alla presenza di una microflora lattica eterogenea, naturalmente presente nel corso del processo di maturazione e stagionatura, alla quale è attribuita un'attività metabolica di non poca importanza nella definizione dei parametri di qualità e di unicità del prodotto finito. L'utilizzo delle metodiche della microbiologia classica, insieme con sistemi analitici molecolari, hanno consentito di definire il profilo microbiologico del Carmasciano, individuando le specie e/o i ceppi che potrebbero concorrere alla caratterizzazione di questo formaggio

Abstract
