In the last years, the food industry has been called to satisfy different market demands, including the guaranteeing safety in foods, the application of “mild” technologies, the absence of chemical additives and the short times of preparation. On these bases, this work is aimed at the obtaining safe and fresh fillets of sea bass (Dicentrarchus labrax), which are ready to cook. For this purpose, the inhibiting action of chitosan was evaluated in combination with modified atmosphere packaging and different refrigerating temperatures. Results showed that 1% chitosan, associated with a modified atmosphere consisting of 40% CO2, 40% N2 and 20% O2, is able to preserve sensory and qualitative features of fresh sea bass fillets when stored at 2°C.

L’industria alimentare deve rispondere a nuove esigenze di mercato orientate alla ricerca di prodotti che, oltre a garantire sicurezza, siano minimamente processati, privi di additivi e caratterizzati da un alto contenuto di servizio tale da ridurre i tempi di preparazione al momento del consumo: piatti pronti, semipronti, surgelati, da cuocere o scaldare. Il presente lavoro si propone di garantire salubrità e sicurezza d’uso e nel contempo un idoneo prolungamento della shelf-life di filetti di spigola freschi pronti per la cottura. A tal proposito è stata valutata l’azione inibente espressa dal chitosano e dalle atmosfere modificate a 2°C e 4°C sulle popolazioni microbiche contaminanti. I risultati hanno evidenziato che l’impiego di chitosano, in particolare se in combinazione con opportune atmosfere modificate, rallenta lo sviluppo dei microrganismi alteranti. Azione che appare più netta qualora tali strumenti siano accompagnati da una refrigerazione a 2°C. Tali condizioni hanno permesso, per l’intera shelf-life, la salvaguardia della qualità microbiologica e sensoriale del prodotto.
